700 Strong...



700 hundred people showed up on Saturday to help clean the beach. They were big and small, they wore pink and helped pick up every single piece of trash on this entire island. We all love this island, be us a local or an occasional visitor but we all agree on one thing- the beach and the surf and the creatures that live on the both deserve a fresh clean litter free beach. Now- let's all work together to be sure that the visitors that show up between now and next spring's beach clean up leave nothing behind but their foot prints.

The Deen Family Dinner minus the Deen's







































Now that the busy, busy season is over ( but we are still busy with visitors during this glorious September season!) we have a bit of time on our hands to have some fun. Hallie, one of our favorite Tybee friends put together this little dinner party last weekend . Here is her invitation:


"I’m writing to invite you over to my home on Saturday evening for the first of many Deen Family Dinners (minus the Deen’s). This time we will split the responsibility and have everyone bring something – the only pre-requisite is that it has to be a Deen Family recipe (i.e. a recipe from any one of their cookbooks or their websites). This can be any Deen Family recipe from Paula to Jamie, Bobby to Bubba. I will provide the main course – which will be something from the boys new cookbook Take It Easy (which is a fantastic cookbook ….you must stop by Seaside Sisters and buy you one). Hallie"


We all loved the idea and I jumped on this big time. I so enjoy cooking especially with a theme attached. We starting the evening out with Cucumber Martini's and Candied Bacon .... yes- an appetizer only our Paula could put together. The recipe is from the Deen Family Cookbook-you basically lay bacon on a cookie sheet, pour bourbon on top and then sprinkle with brown sugar. Bake until crisp... People couldn't stop with just one piece! This is right up there with Paula's Krispy Kreme Bread Pudding we make for the annual holiday party!


Here's the items I made an amazing appetizer- shrimp dip , then a savory Blue Cheese Cornbread Bread Pudding ( btw- did any of ever use the word savory to describe food before we all started watching the Food Network? I know I didn't!) For desert I made the big thick Carrot Cake with pecans and coconut from Corrie Hiers ( Paula's niece) complete with Cinnamon Cream Cheese frosting! On top of the cake, I had soaked dried apricots in bourbon and then placed on top fo the cake to look like little carrots and then fresh mint on top to look just like miniature carrots.All of my recipes I prepared came from the Deen Family Cook book which you can see on http://www.pauladeen.com/


As you can see from the pictures, even Paula showed up for the party. True- she was a little stiff and didn't move from the one spot - guarding the buffet table, but she didn't stop smiling! We knew she was having lots of fun. As did all of us!

More figs!

Thank you Martha for this amazing recipe you sent to share! We're looking forward to your return to Tybee this fall! I spent the morning kayaking the Back River this morning and thought about you and all your many friends who love these waters so much.

Everyone- here's the tremendous recipe to enjoy!

Fig and Stilton Salad

Ingredients

3/4 cup ruby port
1/4 cup dry red wine
1/4 cup vegetable oil
3 tablespoons balsamic vinegar
2 tablespoons hazelnut oil or walnut oil
1 tablespoon sugar
1 tablespoon red wine vinegar
1/2 tablespoon Worcestershire sauce
1/2 tablespoon mild-flavored (light) molasses
1/4 teaspoon onion powder
1-2 cups figs, quartered
Note: You may substitute the wines for any red, and the oil with vegetable or olive oil. Also, I substituted honey for the molasses.
1 5-ounce bag mixed baby greens (about 10 cups loosely packed)
4 ounces Stilton cheese, crumbled (about 1 1/4 cups)
Preparation
Whisk everything but the figs in a medium bowl to blend. (Dressing can be made 3 days ahead. Cover and refrigerate.)
Bring vinaigrette to simmer in heavy large nonstick skillet over medium-high heat. Simmer until dressing is slightly syrupy, stirring occasionally, about 10 minutes. Add figs and simmer for another 5 minutes. Cool slightly. Season dressing to taste with salt and pepper.
Divide greens among 6 plates. Sprinkle cheese over greens. Ladle warm dressing and figs over salads and serve.

The Fig Adventures





























My summer goal was to take advantage of these wonderful summer figs which grow on Tybee and find some great recipes to enjoy. As I rode my bike all over the island, I've been noticing some enormous fig trees bearing fruit! The challenge was would the squirrels and birds get the ripe figs or would I..... I managed to find enough figs to make a couple of delicious fig cakes with cream cheese frosting ( recipe came from the Southern Living cook book http://www.southernliving.com/). My bike basket picture shows the fruits of my forging where I found several dozen ripe figs AND another bird nest that had fallen from the trees during a recent wind storm.

Monday Night Mermaid Musing..


Monday night and almost ready for bed- but some thoughts..... I loved Patrick Swayze in North and South- the TV mini series. I think it was one of the reasons I wanted to badly to move to the South. To have someone like him who would ride up on that horse and rescue me after those darn Northern Aggressors destroyed everything in the Southland- ah- that was the dream.... Everything else he did after that was just a bonus- he had me at North and South forever... Rest in peace Patrick...

We're taste testing the 3 coffees to decide which one will be Mermaid Morning Bliss- Sandi Postle- if you're reading this- we need to have you as part of the taste testing since it's your name! Savannah Coffee Roasters is the local coffee company we're working with for the coffee- it all smells good and since I don't drink coffee - I'm sure my taste test panel will select the right one!

We made it to the next round of the Shine A Light project! Now the judges- who include Diane Von Furstenberg and Ellen DeGeneres will be selecting the final three companies. After they've selected the final three, then we'll all be able to vote. And as they say at the Academy Awards- it's truly just an honor to be nominated!!!! http://shinealight.ivillage.com/

Picking up Trash along the Gateway to Tybee





Tybee Beautification coordinates several trash pick ups over the year. They pick up trash along Highway 80 from the Lazeretto Creek Bridge all the way down past Seaside Sisters. They also organize the Beach Sweeps where hundreds of volunteers show up. We picked up trash last Saturday AM and another trash pick up / flower planting is scheduled for Downtown Tybee . This is a picture of several other volunteers from Savannah State College who are always helping out with this efforts. A special thank you to Kathryn Williams with Tybee Beautification who does such a great job coordinating the project!

September 11th, 2001

I woke up early this morning thinking about all those people who woke up on September 11th 2001 and started their morning and daily life just like they normally did, not realizing the world would change this day. What I can't figure out today is why this is not the first news story today- yes it's still mentioned and acknowledged, but each year it becomes a more distant memory. I don't want to forget all those people who went to their jobs and never came home. Or ran to rescue and help those in need and also never came home.

I was in London on Marriott business. I was with Marriott colleagues, 60 customers from all over North America and my mom and sister who were able to join me on this business trip. Tuesday was our off day from the trade show and I was in Chelsea window shopping. I walked into this wonderful little pillow store which sold ridiculously expensive pillows ( $220 for a pillow!). The 2 shop girls were in the back of the store, looked up at me and said- " Are you American?" When I said yes, they said, "your country is under attack." They motioned me to this tiny TV and I saw the second plane flying directly into the 2nd Tower. I could not believe my eyes.... I quickly went back to the street to grab a taxi back to the hotel, the cabby had tears in his eyes as he told me how sorry he was for my country... Everyone I encountered the next hour getting back to my room could not have been kinder to me as an American... We spent the next week in England with our customers and colleagues until airplanes were allowed to fly again. Watching TV, mourning, staying in touch with our friends and family back home.... a week I'll never forget. Our flight back to the US was on the first day you were allowed to fly. Everyone was very nervous during the 7 hour flight, but British Airways did a tremendous job and we all applauded wildly when we landed in Atlanta.

Personally I didn't know anyone who was killed in the attacks, but I do have a connection to one very special woman.

My friend Ann ( who I'd written about earlier this year - Love at 52 1/2) grew up in Maryland with a family with three kids. The oldest daughter was Ann's age and they were life long friends. She worked in NYC at Cantor Fitzgerald, fell in love and married in her 30's and had the perfect NYC life. Exceptional success at work, , happiness and love with a great guy .... She was just like us, went to work on a beautiful Tuesday morning at a career she loved and around 8:45AM a plane plowed into her office building a few floors below where she was working on the 104th Floor and she had no way down....


Her mom is someone I've gotten to know thru Ann over the past few years, Joan, is one of the bravest women I've ever met. A tremendous faith that has taken her through the past 7 years. She told me a few years ago that even though I didn't know her, I had a guardian angel who would always be around watching and protecting. Today, and every day, I honor Valerie Silver Ellis . The New York Times did a series of tributes to all the people who died on Sept. 11th to tell the rest of the world what these people were all about. Here is Val's.


"Fixing Shoes, and Wagon"

One of the best Valerie Silver Ellis stories takes place in the early '80's when she was starting out at Cantor Fitzgerald. A senior trader asked her to take his shoes to be repaired, so Ms. Ellis had taps put on the toes and the heels extended to four inches. When the senior trader ordered the upstart young trader to redo the job, Ms. Ellis had the shoes bronzed."They ended up being friends," said Brian Hull, a friend and former client of Ms. Ellis. "She refused to be insulted, she refused to be intimidated. She just worked as hard as she could and she won."Ms. Ellis, a 46-year-old equities trader, worked at Cantor Fitzergerald for 20 years, 18 of those at the World Trade Center."Someone said at her memorial that Val collected people," her husband, Sam Ellis, said. "She also loved to collect art. We had a place in the Hamptons and she liked the artists in the area. She loved the beach; she loved her dog Spudley. She also loved the theater and we'd often entertain clients by taking them to theater and dinner."Mr. Hull said, "You never had to see her to know that she was in a room. You just knew her laugh. She always found a reason to laugh."

I moved to Tybee Island full time in November of 2001. I decided that if a girl just like me could die after going to work at on a beautiful Tuesday, then I'd better be doing what I love and living where I truly want to be and appreciating and valuing every single day of my life .

The O'Neill Girls excellent summer adventures!

A lemonade stand AND growing hair long enough to be given to Locks of Love to help cancer patients have beautiful wigs made from hair donated. We finally meet Berkeley face to face




































Berkeley , our newest guide dog puppy and Sandy - his puppy raiser, came by to visit on their way home to Sandy's in Orlando. Sandy is one of my Marriott friends who is now on her 6th puppy to raise for the Guide Dog Foundation. Berkeley is a beautiful, sweet and very smart little dog and we all loved meeting him. Everyone was very excited to have a chance to cuddle him- except for Danny who just sat on the top step and wondered what all the fuss was about. He forgets that before he began his life as a lucky Tybee dog, he was a guide dog puppy himself! And if it weren't for his bad hips, he would have been a wonderful service animal. We'll keep everyone updated on Berkeley's progress as he grows and learns all the way thru his year with Sandy and then when he heads back to Guide Dog School for his harness training.
