The hand made dog pillows





















Aren't these pillows wonderful! Sarah's mom- the newly married Mrs. Dyer made these pillows for me! Danny has already taken over the sofa using these as his pillow to sleep. I promise, this is not "crazy dog lady" territory, this is a very thoughtful gift from someone with a great talent!


Danny and Max love this sofa, they sit on the arm or the back of the sofa and they look out the window all day long, watching the birds , watching the parade of people go by, just being Tybee dogs!

Just because he's so cute....


I am not one to dress up dogs like little people ( sorry Jeff and Orlando!) I think those poor dogs are just cringing inside when their humans decide they need to look like them. I also think that so many humans really do look like their dogs. I was in the Vet's office today with Max and one of my favorite past times is to look at the people and say yep, those people do indeed look like their dogs. I know I look like a lab. More like Danny then Max, but I absolutely am one of those people who others talk about saying, yes, she does belong with her dog!

This is the Christmas email we just received from Sandy, our puppy raiser of Berkeley, showing how cute he looks. He's not really dressed up, so this is allowable. I also want to thank Sandy for keeping me so in the loop on what's going on with Berkeley. Having worked with other puppy raisers, she is by far the best in keeping me in the loop on how he's doing.

Keep up the good work Sandy and Berkeley! We need you to become the guide dog so friends like Dave and Sandi here on Tybee will have a guide dog to enhance their lives!!!

Updates on Berkeley our guide dog puppy in training










Berkeley our puppy Mermaid Cottages is sponsoring continues to grow, learn and become a socialized and well behaved dog. Sandy, who has raised several puppies, says he is definitely one of the smartest, if not the best! ( But Sandy probably says that about all her very wonderful guide dog puppies.) Here are some recent picture of Berkeley from a visit Sandy made to Hilton Head Island . Sandy also tried a guide dog harness on him to start to show him how it feels when he's a big grown up working dog! I don't intend to sound food obsessed, but after all it is the holidays! And I saw a great blog post about having Springform pan pants ( meaning for you non cooks that your pants can expand!) but that's the type of Christmas day we had! Katie truly outdid herself and had lots of fun doing so. She created from scratch the pumpkin pie with pears nestled in a homemade gingersnap crust with a few pieces of crystallized ginger. The dinner itself was seared sea scallops- fresh and wild- not frozen and farm raised, roasted root vegetables- beets and carrots, sliced redskin potatoes with goat cheese ( she brought from Brevard- one of her colleagues makes the cheese) and maple bacon, her home made applesauce.

I also realized I don't have a career as a food stylist or food photographer. I love to take pictures but either I'm too much in a hurry to eat what's been prepared or I need to take a picture of a plate and really take my time with the photo. Either way, the food was delicious, the pictures of the food, not so good! Enjoy!

Homemade Key Lime Pie!




Katie brought home a bag from the Asheville Mexican Farmers Market a bag of real key limes. ( the fact that there is a farmers market just for the Mexicans that live in the Asheville, NC area was interesting to me) She knows I love key lime pie and since we're trying to create new family traditions this year because Bob is gone, she thought I should make a pie from scratch. I am a Key Lime Pie snob and have found the best pie to be in Key West from the Blond Giraffe. I will only allow myself one piece per visit , but that one piece is heaven!!!
I spent an hour squeezing those little bitty key limes into a cup to make a whole 1/2 cup of juice. I ground the graham crackers to make the crust. The pie is in the oven and looks perfect! I also decided to explore acouple of recipes to see if there is a lighter version of the pie and sure enough on http://www.cookinglight.com/ there is. Since I tend to OCD on something I enjoy baking ( the sour cream peach pound cake, the praline apple cake) I decided this may be the new thing I bake every chance I get. The lighter version will be what I try soon as this one is gone. Here are the two recipes- almost the exact same except for some lighter ingredients. I also brought with me from Tybee over a dozen fresh lemons that grow on the fruit trees at the incredible cottage- Memories on the Beach so I may use that juice and try a Tybee Lemon Pie! I also did some googling and found that our own Paula Deen has her version of the key lime pie that is served at Uncle Bubba's. You can go to www.pauladeen.com to see Paula's recipe!

The Cooking Light Version:


Yield: 8 servings (serving size: 1 wedge)
Ingredients
2 large eggs
2 large egg whites
1/2 cup Key lime juice (such as Nellie and Joe's Famous Key West Lime Juice)
1 teaspoon grated lime rind
1 (14-ounce) can fat-free sweetened condensed milk
1 (6-ounce) reduced-fat graham cracker crust
1 1/2 cups frozen reduced-calorie whipped topping, thawed
Preparation
Preheat oven to 350°.
Beat eggs and egg whites at medium speed of a mixer until well-blended. Gradually add juice, rind, and milk to egg mixture, beating until well-blended. Spoon mixture into crust, and bake at 350° for 20 minutes or until almost set (the center will not be firm but will set up as it chills). Cool pie on a wire rack. Cover loosely, and chill 4 hours. Spread whipped topping evenly over filling.

1/2 cup fresh lime juice (12 to 15 key limes or 3 to 4 common limes)
4 teaspoons grated lime zest
4 egg yolks
1 - 14 ounce can sweetened condensed milk
11 graham crackers
3 tablespoons granulated sugar
5 tablespoons unsalted butter, melted
PREP WORK
It's easier to remove the lime zest from whole limes so I would start with that. Then I would cut the limes in half and squeeze out the juice being careful not to include any pits.
Process the graham crackers in a food processor or blender and then melt the butter and have it at the ready.
HOW TO MAKE AT HOME
1. Whisk the egg yolks and lime zest together in a bowl until tinted light green. This takes about 2 minutes
2. Beat in milk, then juice and set aside at room temperature till it thickens.
3. Preheat oven to 325 degrees.
4. Mix graham cracker crumbs and sugar in another bowl.
5. Add butter and stir with a fork until well blended.
6. Pour this mixture into a 9-inch pie pan and press over the bottom and up the sides of the pan. Try using the bottom of a measuring cup to make sure the graham cracker mixture forms a firm crust on the bottom of the pie pan.
7. Bake on the center rack for about 15 minutes until the crust is lightly brown, remove and let cool to room temperature.
8. Pour the lime filling into crust, spread evenly, and then bake for 15 minutes until the center sets, but still wiggles when shaken.
9. Remove from oven and cool to room temperature.
10. Refrigerate for at least three hours until well chilled.

Paula Deen's Y'all Come Inn for the holidays



























We have such creative mermaids who are part of our team. We are lucky enough to manage Paula Deen's family beach home and our ladies had great fun decorating the home for the holidays! When Shannon came up with her ideas, I thought it may just be a touch over the edge. It could have gone either way. More on The Kenwood Inn, St Augustine



I'm really having a great visit here in St. Augustine. A very cool community, lots of history, lots of great shops and restaurants, the beach towns is close by, quite a bit like Savannah and Tybee. We just got back from a delicious dinner at one of the local haunts and came back to the Inn to find the Ghost Tour Hearse sitting in front of the Inn. Turned out it had broken down and the two ghost hunter/tour guides were sitting in our front porch waiting for the Triple A towing. Of course we invited them in and of course we made them tell us all the ghost stories about the Inn. The Kenwood Inn is actually the oldest Inn/ B&B in St Augustine. Be sure you read all about it on the website and of course come visit. Turns out it's haunted. And turns out my bedroom is one of the haunted bedrooms. I've stayed in a haunted castle in Scotland in my Marriott days of travel. I actually felt my guest room was haunted and had a very hard time sleeping while there. I didn't want to hear the story about my bedroom here, but I did tell the ghost hunters about my little experience last night that might have been a ghostly encounter. Being a lady of leisure- I could learn to love this lifestyle!

I've said this several times, during my quieter season in the fall and winter I jump in my car and hit the road. Always come back with some new and unique ideas. There is something to be said for a new environment,new space and different people to give you inspirations and get the creative juices following. The dog biscuit idea is definitely going to happen, so stay tuned for the updates on that- and that idea was a direct result of the trip to Mystic and The Black Dog Store.

I'm still on my road trip to Florida but now have left South Beach to head up the coast to visit my friend Pat and her Bed and Breakfast. Pat was a client of mine for years with Marriott, she was one of the most creative and professional meeting planners I ever dealt with. She and her husband who himself ran luxury hotels all over the world, have left their corporate careers to open their own B&B. The Kenwood Inn is an old hotel that is now a B&B and right in the heart of St Augustine, FL. Couldn't be a better location to see and do everything. Right now I'm sitting on the front porch in a rocking chair on my friend's Netbook ( another GREAT Idea!) listening to the sound of the rain! The Mystry of The Black Dog Store























There is a store in Mystic, CT and Annapolis, MD called The Black Dog. The Black Dog is actually a bar and restaurant on Martha's Vineyard that has taken on a life of it's own. The bar is secondary. People - like my mom and I , my friend Ann George and thousands of others come in not to eat and drink but to shop. In fact when I was in Mystic, I actually said to the store clerk-- where is the restaurant? He looked at me like I was crazy and said this is just the store. Everything you could imagine to buy with the logo. Which of course we did- coffee mugs, mouse pads etc. We even posed outside the store to have our pictures taken and a very odd man asked if he could be in the picture- and there he is!


The number one seller at the store? Their dog biscuits.... hmmmmm this definetly gives me an idea.. Mermaid Cottage Dog biscuits? Or maybe a very cute name? Stay tuned...

Our Award Winning Christmas Decorations!
















We are delighted to have been awarded by Tybee Beautification Association for "Best Use of Multiple Listings". Here are pictures of Lemon Drop Cottage, Dutton Waller Cottage and Mermaid Manor. We've already shared some pictures of Fish Camp Cottage and how bright and cheerful that cottage is! We'll be sharing and posting pictures of the holiday decorations from Y'all Come Inn later this week. Thank you Shannon, Jan and Jill for your hard work on making these cottages look so bright and cheerful.

These are the "mater sandwiches" which are basically tomato sandwiches with Duke's on white bread, and my Carmel Apple Cake but disguised this time with cream cheese frosting vs the traditional praline apple topping. Enjoy and it's ok to be a little hungry!

And the people of the Paula Queen Party
















Maybe people is not the right term - Puppet People came to the party and were a huge hit. Paula Queen made her entrance wearing her signature butter necklace and earrings and Mercedes Overdrive just flew in from Boca Raton and everyone loved them! We thought our wonderful Tybee friends would be enough local character but once the puppets arrived we were all just background. Thank you Angela and Allison for joining us and bringing your magic. Don't forget- you too can have these puppets and many many others come to your corporate meeting , conference or even your kids birthday party! Thank you as well to our friends from the Tybee City Council and Business Alliance for joining us and a special thank you to Hallie who was the tour guide for the bus ride down from Savannah to Tybee and Susan who helped us hostess.

The Paula Queen Party Food & Decor
































Because so many of you could not join us for the party we hosted @ Dutton Waller Cottage for our friends from SITE, here is the menu and pictures from the party.
